I'm in this same situation where I haven't been a fan for very long and went out and bought up all the games. I have yet to completely finish a main series game, which I've never lied about, but it is something I feel a little embarrassed about. Also partly the problem is, when I grew up I only played platform games, so I'd play them, get bored or stuck and never finish. And then I'll start a brand new game. It's a bad habit I picked up. At the moment I'm in the middle of I, VII, and XIII, as well as some non-FF games.

The only FF game (in the mainline series) that I have not completed is Final Fantasy V. I just found that game to be so hard! I have it on both PSX and GBA and each record I have is about 20 hours in.

Since FFV is never really talked about (by most people) and since none of its characters are particularly memorable (to me), I've just never gone back to finish the story. I don't really feel like I'm missing out even though I have yet to see its end credits.
